Bran and Apple Muffins

I love muffins. They go great with coffee (or tea) and are a perfectly portable snack. My Mom sent me this recipe, promising they were not only reasonably good for you, but yummy too! And as always, Mom was right! The fresh apple and added wheat bran makes a great tasting muffin that you won’t feel guilty about eating.

  2. Hi these muffins were awesome!! Moist with lots of flavour.I love molasses so they are going to be the only bran muffins I will bake now. Thanks to your mom:) Only thing was they were done in 15 min but it is very dry here in Southern Alberta right now,not sure if makes a difference on cooking time. Can’t wait to try your other recipes since this one is such a keeper:)))

  4. I baked these yesterday using 3 1/2 tsp of baking powder and fresh milk. They taste great! Thanks Jen for your awesome tips :)

  5. Hi Christina, It’s not an easy switch. You could give it a try. You’d have to use 3 or 4 tsp. of baking powder and you should probably use regular milk instead of buttermilk.

  6. Hi, I don’t have baking soda. is it fine if I substitute baking soda with baking powder?
