Filling and Topping:
1/2 cup brown sugar
2 Tbsp. all-purpose flour
2 tsp. cinnamon
2 Tbsp. melted butter
1/2 cup chopped nuts (whatever kind you prefer, or a mixture of different nuts)
1/4 cup chopped dates or raisins
Batter:
1-1/2 cups all-purpose flour
3/4 cup granulated sugar
3 tsp. baking powder
1/4 tsp. salt
1/4 cup shortening (I suspect butter would work just as well here)
1 egg
1/2 cup milk
Combine Filling and Topping ingredients in a bowl and set aside.
For batter, combine flour, sugar, baking powder and salt. Cut in shortening until evenly blended.
In a separate bowl, beat egg well; add milk. Stir liquid ingredients into dry ingredients until smooth.
Spread half the batter into a greased 8 inch square baking pan (or loaf pan). Sprinkle with half the filling mixture, then add the remaining batter. Top with remainder of topping mixture.
Bake in a preheated 375° F. oven for 25 minutes or until a toothpick inserted in the centre comes out clean. Cut into squares.
