It may be officially Spring but you sure couldn’t tell by looking outside at my house! The sap has only just started to run this year. But I’m ready with a round-up of maple recipes, for when maple syrup is plentiful and at it’s best prices. Which I hope is shortly because that means Spring has really arrived.
Maple Mustard Salmon
Ingredients
4 Salmon Fillets
2/3 cup butter, melted
1/2 Tsp. dried dill
1/2 cup maple syrup
1/3 cup Dijon mustard
Method
Combine ingredients in a saucepan and heat over low heat until melted together. Grill or broil salmon, basting and turning until done.
Maple Teriyaki Salmon
Ingredients
1/3 cup apple juice
1/3 cup maple syrup
3 Tbsp. soy sauce
2 Tbsp. finely chopped onion
1 minced garlic
4 salmon fillets
Method
In a bowl, combine the first five ingredients.Remove 1/2 cup and reserve for basting (cover and refrigerate). Pour remaining marinade into a large resealable plastic bag. Add salmon, seal bag and turn to coat both sides. Refrigerate for 1-3 hours.
Drain and discard marinade. Broil salmon 4″ from heat for 5 minutes. Baste with reserved marinade and broil 10 minutes longer or until fish flakes easily with a fork, basting frequently.
Maple Raspberry Vinaigrette
Ingredients
3 cups extra-virgin olive oil
4 Tbsp. strong mustard
1-1/3 cups raspberry vinegar
6 Tbsp. maple syrup
1-1/2 tsp. sea salt
1 tsp. fresh ground pepper
Method
Place all the ingredients in a mixing bowl and whisk or beat with an electric mixer to form an emulsion. Pour into bottles and refrigerate until using.
Maple & Balsamic Vinegar Dressing
Ingredients
1 tsp. dry mustard
1 tsp. cilantro
3 tbsp. balsamic vinegar
2 tbsp. maple syrup
1 tbsp. lime juice
1 clove garlic, minced
1 cup extra-virgin olive oil
½ tsp. salt
¼ tsp. black pepper
Method
Mix together the first six ingredients. Whisk in oil until dressing is emulsified. Salt and pepper to taste. Refrigerate to store for several weeks.
Maple Nut Fudge
Ingredients
2 cups sugar
1 cup maple syrup
2 Tbsp. corn syrup
1 tsp. vanilla
1/2 cup milk
1 cup cup chopped nuts (walnuts or pecans)
1 Tbsp. butter
Candy thermometer
Tall saucepan
Method
Boil syrup, sugar, milk and corn syrup, stirring constantly until the temperature reaches 238 °F.
Remove from heat. Cool to 110 °F. Add vanilla, nuts and butter. Beat until thick and creamy. Pour into 8″ pan and cut into squares when chilled.
Maple Bread Pudding
Ingredients
3/4 cup maple syrup
1 tsp. lemon juice
3 slices bread, without crusts
2 eggs
2 cups milk
1 Tbsp. butter
1/4 tsp. salt
1/2 cup nuts or raisins
1/4 tsp. vanilla
Method
Pour maple syrup in top of double boiler. Butter each slice of bread and cube. Add to syrup. Add nuts or raisins and lemon juice. Beat together eggs, milk, salt and vanilla and pour over bread mixture. Do not stir. Set over gently boiling water. Cook 1 hour. This makes its own sauce. Spoon it over each serving.
Maple Butter Tarts
Ingredients
1/4 cup butter, softened
1/4 cup brown sugar, packed
1 egg
1/2 tsp.vanilla
1/2 cup maple syrup
10 – 12 unbaked tart shells
Method
Cream the butter and brown sugar until light and fluffy. Beat in the egg and vanilla. Blend in the maple syrup and pour into the tart shells.
Bake at 350 degrees F for 15 to 20 minutes or until golden brown.
Maple Oatmeal Cookies
Ingredients
1 cups butter
1/2 cup maple syrup
3/4 cup brown sugar
1 (3-3/4 oz) pkg. instant vanilla pudding
2 eggs
1-1/4 cups flour
1-1/8 tsp. soda
3-1/2 cups quick oats
6 oz. pkg butterscotch chips.
Method
Combine butter, syrup, sugar and pudding mix in large bowl. Beat until smooth and creamy. Beat in eggs. Gradually add flour and soda, then stir in oats and chips. Drop by rounded teaspoonfuls on cookie sheet. Bake in 375-degree oven 10 to 12 minutes. Makes approximately 4-1/2 dozen.
Maple Apple Pie
Ingredients
5 cups sliced apples
½ cup sugar
2 tbsp. flour
½ tsp. cinnamon
dash of salt and nutmeg
¼ cup maple syrup
½ cup sour cream
pastry for double crust 9″ pie
Method
Combine dry ingredients and sprinkle 2 tbsp. of it over bottom of piecrust. Add the rest to apples, along with maple and sour cream and stir. Turn into pie and cover with lattice top. Bake at 425°F for 15 minutes, then bake at 325°F for 45 minutes longer or until nicely browned. Remove from oven and cool.
Maple Bars
Makes Approx. 16 Bars.
Ingredients
1/2 cup sugar
2/3 cup sifted flour
1/2 cup soft shortening (or 1/4 cup butter and 1/4 cup shortening)
1 cup nutmeats
1 cup rolled oats
1/2 tsp. baking powder
1/2 cup maple syrup
1 tsp. vanilla
1 egg
Method
Heat oven to 350′. Grease a square pan, 8 x 8 inches. Mix all ingredients thoroughly. Spread in prepared pan. Bake 30-35 minutes. Cut into squares while still warm.
Maple Syrup Nut Cake
Ingredients
2 1/4 cups flour
2/3 cup white sugar
3 tsp. baking powder
1 tsp. salt
1 cup maple syrup
1/2 cup soft shortening
1/2 cup milk
2 eggs
1 cup chopped nuts
Method
Sift dry ingredients together into bowl. Add syrup, shortening and milk; beat 2 minutes. Add eggs and beat 2 minutes. Add chopped nuts and mix well. Pour into 2 greased and floured 9″ pans. Bake in 350°F oven for 25 to 30 minutes. Frost.
Maple Butter Frosting
Ingredients
1/2 cup butter
1/4 cup chopped walnuts or pecans
3 cups confectioners sugar
4-6 T. maple syrup
Method
Thoroughly cream butter and sugar, adding maple syrup until light and spreadable. Add nuts and frost cake.
