Pasta with Italian Sausage and Roasted Red Peppers


We call this pasta dish “Scoobi Noodles” in our house. It is easy to make (on the table in under 30 minutes!) and really yummy. I like to make this with fun, curly pasta that is an S-shaped macaroni-like noodle that resembles a pig’s tale curly-q. It’s the perfect shape and texture to hold the tomato sauce to the pasta and make it easy to eat. Of course, feel free to use any type of pasta you have on hand or like.

If roasted red peppers aren’t your thing (or your kids), you can substitute sundried tomatoes, either the packed in oil ones or dried, plumped in hot water and chopped. If you haven’t used strained tomatoes before, you’ll find them in the tomato sauce/spaghetti sauce section of your grocery store.
