Roasted Tomato, Basil and Feta Penne

This pasta dish is fabulous! The oven roasted tomatoes are bursting with flavour and the garlic and basil with the feta cheese is perfect. For a change of pace, try substituting goat cheese for the feta or add a bit of crushed chillies for a bit of heat. Also, black olives are a natural with the tomatoes and feta cheese.

This dish comes together quickly but the tomatoes do need to roast for about 2 hours, so start them ahead and then relax until you put the pasta on to boil.

  1. I just cooked the penne and added feta and munster with chopped basil, salt and pepper. I refrigerated…can I reheat it in microwave and for how long?
