Fruit:
8 fresh peaches,peeled, pitted and sliced
1 cup granulated white sugar
2 tsp. ground cinnamon
Batter:
1/2 cup softened butter
3/4 cup white sugar
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 tsp. vanilla
Topping:
1 cup boiling water
4 Tbsp. butter
Preheat oven to 350° F. Grease a 9x13 inch baking dish.
Stir together peaches, 1 cup sugar and cinnamon the set aside.
In a medium bowl, cream together butter and 3/4 cup sugar. Blend in flour, baking powder and salt alternately with the milk. Pour into greased pan the top with the peach mixture.
Drop 4 Tbsp. butter into the 1 cup of boiling water and pour all over peaches.
Bake in preheated oven 50-60 minutes, or until golden brown. Let cool for at 30 minutes to set-up. Serve warm with ice cream, whipped cream or table cream.
