Goat Cheese, Caramelized Onion and Mission Fig Dip
This is an easy and really tasty appetizers that's made ahead and just heated up before serving. And did I mention it's really, really tasty! Perfect for any occasion.
Bitten Brownies
These are the perfect brownie in my opinion. They are perfectly chocolatey but not too sweet. They cut beautifully and are moist with just a slight crust. Sprinkle with a little icing sugar and enjoy. (Bonus: only one pan to wash up afterwards!)
Goat Cheese, Roasted Red Pepper and Baby Spinach Frittata
I can't count the number of times that this dish became dinner when time was tight. It's on the table in about 10 minutes, it's full of veggies and it's really, really tasty. With a side salad, it's the perfect quick and easy dinner.
Chicken Breasts with Mustard and Tarragon
This dish is probably my favourite chicken breast dish. I just love the combination of mustard and tarragon and the creamy sauce is so satisfying. No, it's not low-cal but worth every calorie!
Pasta with Lemon and Asparagus
Don't let the lemon and pasta combination put you off. This is a great pasta dish, wonderfully light and fresh and a perfect spring/summer pasta dinner.
Apple Walnut Pie
My favourite pie of the last year is not actually a conventional pie. This pie features cut up apples with a walnut crust that comes together quickly and easily and is a nice change from a regular pie.
Cream of Mushroom Soup
I love the flavours in this soup and I also love that it's not overly creamy. Best of all, this soup doesn't need to simmer for hours. It can be on the table in about half an hour! Serve with some homemade croutons in it for a yummy lunch soup.
