I have been making this salad for years and it’s still a favourite. It is perfect as a dinner salad all on it’s own, or with souvlaki (or any grilled meat).
It’s really almost a Greek salad but with a lot more chopped vegetables and less lettuce. Just the way I like it! I like to serve this salad on a big, heaping plate for sharing, instead of a bowl. It’s just so pretty that way!
I like to change the vinegar sometimes. This salad is especially good with tarragon vinegar (instead of red wine).
Greek Style Chopped Vegetable Salad
ingredients
1 head romaine lettuce, finely chopped (about 4 cups)
4 medium plum tomatoes, seeded, finely chopped (about 1 1/2 cups)
1 large cucumber, peeled, seeded, finely chopped (about 1 1/4 cups)
1/2 cup chopped red onion
1 cup crumbled feta cheese (about 4 ounces)
1/4 tsp. dried oregano
Freshly ground pepper
1/2 cup pitted halved black olives
1/4 cup extra virgin olive oil
3 tablespoons red wine vinegar (or try tarragon vinegar, for a nice change)
Method
Line the bottom of a large plate with the lettuce. Sprinkle the chopped vegetables over the lettuce. Top with crumbled feta and olives. Sprinkle with dried oregano and freshly ground pepper.
Shake together the olive oil and vinegar. Pour over salad just before serving.
