Chicken Salad with Apple, Celery and Walnuts

Looking for a great use for leftover chicken? This simple salad is great for lunch or a light dinner. Serve over salad greens or change it up by adding some cooked pasta to it.

Chicken Salad with Apple, Celery & Walnuts


Cooked chicken, either poached, grilled or roasted
2 apples, peeled cored and diced
2 stalks celery, sliced finely
3/4 cup walnuts, roughly chopped (or try pecans, as an option)
1/2 – 3/4 cup mayonnaise
1 Tbsp. cider vinegar
2-3 Tbsp. heavy cream
finely chopped parsley
salt & fresh ground pepper


Make sure chicken is skin and bone-free, Dice chicken and place the chicken meat in a bowl. Add the apple, celery, walnuts, mayonnaise, parsley if using and season to taste with salt and pepper. Refrigerate or serve.

Serve in a mound over salad greens (try using an ice-cream scoop!).
