Fresh 3-Cheese Ravioli


I recently treated myself to a pasta roller/cutter attachment set for my Kitchen Aid mixer, after wanting one for a long time. I have to say, I’m having a ball with it. Who knew making pasta was so much fun? And the taste is out of this world!

This weekend, I tried my hand at homemade ravioli. After researching several recipes, I set myself up to make a bunch of ravioli to freeze and have handy for quick dinners. I made 4 kinds of ravioli, but this was the first one we tried (for dinner tonight). It was fabulous! I don’t think I’ve ever had cheese ravioli where I could actually taste the cheese. I highly recommend these, especially with the suggested sauce! It’s truly gourmet, homemade and at home.

If you don’t have a pasta roller, you could make these with fresh lasagna sheets from the grocery store, or even wonton wrappers. I suspect it wouldn’t be too hard to roll out handmade dough either, with a rolling pin.
