Weekly Meal Plan: October 24, 2009



I have been keeping up with my meal plans, I just haven’t been keeping up with getting them posted here ;) This meal plan reflects the cooler weather we’ve been having here, with a good bit of comfort food here, along with some light choices. All but one of these recipes can be found right here. Just follow the link for the recipes.

SUNDAY (Beef)

Beef Bourgignon with mashed potatoes and corn

MONDAY (Chicken)

Chicken Katsu with rice and green beans

TUESDAY (Fish)

Salmon with Scallions, Tarragon and Lemon with salad

WEDNESDAY (Soup/Vegetarian)

Hearty Tuscan Soup with homemade biscuits or crusty bread

THURSDAY (Pasta)

Tuna Noodle Casserole with Mushrooms and Parmesan with salad

FRIDAY (Vegetarian)

Roasted Corn Quesadillas Recipe (From Guy Fieri on the Food Network) with salsa and sour cream (I will use frozen corn instead of corn on the cob, which is out of season here now)

2 1/2 lbs. stewing beef

Chipotle Peppers in Adobo sauce
Beef Stock, box

1 large can diced tomatoes (28 oz)

Small whipping cream (250 ml/ 8 oz.)
