Zucchini Loaf (Print Version)

Zucchini Loaf

ingredients

1 1/2 cups all-purpose flour
1 1/2 cups all-purpose whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. ground cinnamon
3 eggs
1 1/2 cups granulated sugar
1 cup vegetable or canola Oil
2 tsp. vanilla
2 cups zucchini, shredded and unpeeled
1/2 cup walnuts, chopped
1/2 cup raisins

method

Preheat oven to 350°F and grease two 8½” x 4½“ loaf pans.

Combine the first six ingredients and stir well to blend.

Beat eggs in separate large mixing bowl. Gradually beat in sugar, then oil and vanilla. Add dry ingredients gradually, mixing well. Stir in zucchini, walnuts and raisins. Pour batter into prepared pans.

Bake for 55 to 60 minutes or until toothpick inserted in centre comes out clean. Cool in pans for 10 minutes, and turn out onto rack to cool completely.
