Mocha Magic Torte
ingredients
For the Cake:
2 1/4 cups all-purpose flour
1 1/2 tsp. baking soda
1/3 cup instant coffee
1 1/3 cups water
1 2/3 cups sugar
3 eggs
1 tsp. vanilla
1 cup mayonnaise
3 squares unsweetened chocolate, melted & cooled
For the Frosting:
4 squares unsweetened chocolate
1/2 cup milk
2 Tbsp. instant coffee
1 cup butter
3 cups icing sugar
1 egg
method
Preheat oven to 350° F.
To make the cake: Sift the flour with the baking soda in a bowl. In a separate bowl, dissolve coffee in water.
In a stand mixer bowl or other large bowl, beat sugar, eggs, and vanilla until light and fluffy. Blend in the mayonnaise and the (melted and cooled) chocolate. Add the flour mixture alternately with the coffee, one-third at a time, on low speed with the stand or electric mixer.
Pour into 2 greased and floured waxed paper-lined 9-inch layer pans. Bake at 350° F. for 35 min. or until cake tester inserted in centre comes out clean. Cool in pans 10 min. Remove and finish cooling on wire racks.
For the Frosting: Melt the chocolate with milk and coffee in a bowl over hot water (or carefully and slowly in the microwave). Blend until smooth. Cool. Cream butter and sugar until light and fluffy with an electric mixture. Add egg and beat at high speed of electric mixer for 1 minute. Add chocolate mixture to butter mixture; blend well.
To assemble the cake:
Cut each layer horizontally to make 4 layers. Spread each layer with 3/4 cup frosting and cover top and sides of cake.
