Apple and Cream Cheese Torte
ingredients
For the base:
1/2 cup butter, softened
1/3 cup granulated sugar
1 cup All-purpose flour
1/3 cup raspberry or apricot jam
For the filling:
1 8oz/250g package Cream Cheese, softened
1/4 cup granulated sugar
1 egg
1 tsp. vanilla
For the topping:
3 cups peeled and thinly slice apples
1/3 cup granulated sugar
1/2 tsp. cinnamon
1/2 cup sliced almonds
method
Prepare the base by creaming together the butter and sugar until thoroughly mixed. Blend in flour. Press evenly onto the bottom and 1-1/2 inches up the side of a springform pan. Spread jam evenly over bottom part of crust.
For the filling, beat all filling ingredients together with an electric mixer until smooth and light. Spread over jam evenly.
For the topping, toss apples, sugar and cinnamon together to coat well. Spoon over filling. Sprinkle with almonds.
Bake at 450° F. for 10 minutes then reduce heat to 400° F. and bake for 25-30 minutes or until set and apples are tender. Cool slightly then remove pan rim.
