Crab Strata

ingredients

1 loaf French bread, cut in to 1/2-inch slices on the diagonal
1 cup milk
1 pkg. frozen spinach, cooked, drained and chopped
1 can crab meat, drained and chopped
2 Tbsp. butter
2 Tbsp. green onions, chopped
1/2 tsp. dried thyme
1 cup Swiss or mild cheddar cheese, grated
4 eggs
Salt and freshly ground pepper
1/2 cup 35% cream

method

The night before serving, dip bread slices in milk and gently press out as much liquid as possible. Arrange a layer of bread slices in the bottom of a buttered, oven-proof dish, approximately 8 x 8 inches.

Melt butter in a skillet and cook onions until soft, over moderate heat. Add the crab meat and thyme and heat for a few minutes. Season with salt and pepper.

Layer half the spinach on top of the bread slices, then half the crab mixture and one third of the cheese. Repeat layers with remaining ingredients, ending with the layer of bread and cheese.

Beat eggs with salt and pepper and pour over layers. Cover with plastic wrap and leave in the refrigerator overnight.

The following day, bring to room temperature. Pour a layer of cream over the top. Bake at 350° F. until puffed and lighty browned, about 40-50 minutes. Serve hot.
