California Bites
ingredients
1 pkg. refrigerated crescent rolls
1 8oz. pkg cream cheese
1/3 cup mayonnaise
2 Tbsp. pesto
1 cup slivered sun dried tomatoes (re-hydrated, if necessary)
1 clove garlic, minced
1 red pepper, finely chopped
2 green onions, chopped
1 1/2 tsp. canola or vegetable oil
1 1/2 tsp. vinegar
method
Unroll crescent rolls but only separate into 2 large rectangles (2 sections of 4 crescents). Lay on an ungreased cookie sheet side by side and press together to join them in the middle to make one large rectangle. Bake according to temperature on package for 11 minutes. Remove from oven and cool.
Make filling by combining cream cheese, mayonnaise, pesto, sun dried tomatoes and garlic in a blender. (*If time allows, mix up the filling ahead and refrigerate so that the flavours have a chance to develop).
Spread filling evenly over the cooled crescent base.
Combine chopped red pepper and green onion. Spread evenly over cream cheese filling. Prepare vinaigrette by combining oil and vinegar. Drizzle over the top.
Cut into bite-sized squares.
