Mom's Meatloaf (Print Version)

Mom's Meatloaf

ingredients

1 8 oz. can tomato sauce
1/4 cup brown sugar, packed
1/4 cup cider vinegar
1 tsp. Prepared yellow mustard
1 large egg
1-1/2 tsp. salt
1/4 tsp. pepper
1/4 cup crushed saltine crackers (or more)
2 lbs. ground beef
1/2 cup chopped onion

method

In large bowl mix together the tomato sauce, sugar, vinegar and mustard. Pour half the tomato mixture into a larger bowl; add the egg, salt, pepper and crackers and mix. Add the ground beef and onion and mix well.

Shape into loaf and place in loaf pan. Spread with the remaining tomato mixture. Bake at 350 degrees F. for 1 hour.
