Spicy Peanut Pork (Print Version)

Spicy Peanut Pork

ingredients

1/2 pkg. (114 grams) rice noodles
1 pork tenderloin, about 1 lb. (500 grams)
Salt and pepper
1 Tbsp. vegetable oil
1 bunch green onions, thinly sliced
1 red pepper, thinly sliced

Peanut Sauce:
1/3 cup hot water
1/4 cup smooth peanut butter
1 Tbsp. seasoned rice vinegar
1 Tbsp. soy sauce
2 cloves garlic, minced
1 tsp. Asian chili paste

Garnish:
2 Tbsp. shelled, chopped peanuts

method

In a small bowl, whisk together the water, peanut butter, vinegar, soy sauce, garlic and chili paste. Set aside.

Place the rice noodles into a large bowl and pour boiling water over to cover. Let stand for 10 minutes or until softened.

Cut pork tenderloin in half lengthwise and then slice thinly. Season with salt and pepper.

Heat oil in large, nonstick skillet over medium-high heat and saute the pork for about 4 minutes or until browned. Remove to a plate. Add the green onions and red pepper to the skillet and saute for about 4 minutes or until tender-crisp. Remove to the plate with the pork.

Pour peanut sauce into the skillet and bring to a boil. Return pork and vegetables to skillet.

Drain noodles and add to skillet with the pork and vegetables. Cook for about 3 minutes or until coated well. Sprinkle with peanuts before serving. Serve with additional chili paste, if desired.
