Apple Pie Oatmeal with Cinnamon Foam (Print Version)

Apple Pie Oatmeal with Cinnamon Foam

Special equipment required: some sort of device for making cappuccino/latte-like foam. I use a wand-type frother thingy that can be bought in most kitchen stores for under $10.

ingredients

For the Oatmeal:
1 cup whole rolled oats
(old-fashioned rolled oats or quick oats, but not "instant" type oats)
2 cups milk
1 apple, cored and chopped
(no need to peel unless you have an aversion to cooked apple peel :)
2 Tbsp. brown sugar
1 tsp. cinnamon

For the Cinnamon Foam:
1 cup skim milk
(Milk with little or no fat froths better. If you don't have skim, 1% or 2% would still work, as an alternative)
1 tsp. cinnamon
1 Tbsp. brown sugar

For the Oatmeal: Pour the oats, milk, apple, brown sugar and cinnamon into a saucepan and bring to a simmer. Continue gently cooking until it's thick and creamy, about 15 minutes (may be quicker if using quick-cooking oats). Stir every few minutes to keep the mixture from sticking to the bottom.

For the Cinnamon Foam: Whisk together the skim milk, cinnamon and brown sugar. Steam the milk using the steamer attachment of an espresso machine or alternately, heat the milk in the microwave until hot and use a frother-type device (plunger, frother tool) to make a cappuccino-like froth.

Spoon the oatmeal into 2 serving bowls and top each with some cinnamon foam. Serve immediately.
