Breakfast Cereal Muffins (Print Version)

Fibre 1* Flax Seed Morning Glory Muffins


My Notes: Short of taking a hammer to it, it's darned hard to crush Fibre 1* cereal. I just let it soak in the milk and then mashed it up with my potato masher instead. And while I haven't actually tried it, I suspect you could easily substitute All-Bran cereal in this recipe as well. I didn't have any ground flax seeds, so I just left them out. Other than missing out on all that Omega 3 goodness, it still produced a tasty muffin.

ingredients

1 cup Fibre 1* Original cereal, crushed
2/3 cup skim milk
1 cup flour
3/4 cup ground flax seed
3/4 cup chopped apple
1/2 cup packed brown sugar
1/2 cup finely shredded carrot
1/4 cup granulated sugar
1/4 cup flaked coconut
1 tbsp canola or soybean oil
1 tbsp baking powder
2 tsp cinnamon
1 tsp vanilla
1/2 tsp salt
2 eggs, slightly beaten

method

Heat oven to 375°F. Grease 12 regular size muffin cups, or place a paper baking cup in each.

In large bowl, stir together cereal and milk; let stand about 5 minutes or until cereal is softened. Stir in remaining ingredients. Divide batter evenly among muffin cups.

Bake 18 to 22 minutes or until toothpick inserted in centre comes out clean. Let stand 5 minutes. Remove from pan and serve warm.

Makes: 12 muffins
