Curly Pasta with Italian Sausage and Roasted Red Peppers
Pasta with Italian Sausage and Roasted Red Peppers
ingredients
5 or 6 links of Italian Sausage, mild or hot (whichever you prefer)
1 or 2 cloves garlic, minced
1/2 cup jarred fire roasted red peppers, cut into thin strips (you can make your own but I find the oil from the jarred is a nice addition to this dish)
450 grams (about 1 pound) Cavatappi or Scoobi Do Pasta (an S-shaped tubular macaroni noodle)
1 jar or carton of good quality strained tomatoes
1/4 cup Freshly grated Parm Reggiano, plus more for garnish
method
Start salted pasta water to boil.
Cut each sausage link into 1/2-3/4 inch pieces (rounds). In a non-stick frying pan, over medium high heat, cook and brown the sausage pieces. Add the garlic and heat with sausage until softened.
Add pasta to boiling water and cook to al dente. *Reserve 1/2 to 3/4 cup of pasta water before draining.*
While pasta is cooking and once sausage are cooked and well browned, add strained tomatoes and roasted red peppers. Simmer sauce over low heat. Add reserved pasta water and cook down the sauce until pasta is ready. Add 1/4 cup grated parmesan to sauce.
Place cooked pasta in large bowl. Pour tomato sauce over and mix well. Garnish with freshly grated parmesan and some finely chopped basil or parsley, if you like.
Serve with garlic bread and a salad for a quick and easy meal!
