Dinner Quick! Spaghettini with Cherry Tomatoes and Arugula
Spaghettini with Cherry Tomatoes and Arugula
ingredients
Spaghettini (or other pasta of your choice)
2-3 Tbsp. Olive Oil
2-3 cloves garlic, minced
Fresh arugula (or spinach)
Cherry or grape tomatoes, sliced in half
1/2 cup freshly grated Parmesan cheese, plus more for shavings
Salt and freshly ground pepper to taste
method
Start salted pasta water to boil and add pasta when boiling.
Meanwhile, in a skillet heat olive oil. Add garlic and sliced cherry tomatoes. Saute until soft. Before draining pasta, remove 1/2-3/4 cups of pasta water.
Drain pasta and place in a large serving bowl. Add reserved pasta water to skillet and then put several handfuls of arugula or spinach on top and cook over medium heat just until wilted. Add parmesan cheese, salt and pepper, to taste and cook only a few seconds longer. Add mixture to pasta. Stir and top with more parmesan shavings.
Serve with a salad and crusty bread for a quick 15 minute meal!
