Every store I’ve gone in this week has had a huge bin of beautiful Butternut Squash on display, selling at the cheapest prices you’ll see all year (currently selling at 99 cents a pound in these parts). There is not a better time to pick up a few. Now you just have to figure out what to make with it.
Butternut squash keep a really long time if stored in a cool, dark place, so stock up and you’ll be enjoying them for months! And they are a great vegetable to have around, as they are (usually) pretty kid-friendly.
Struggle with cutting butternut squash? Yeah, me too! Here’s a great tip. Poke the skin a couple of times with the end of a knife. Pop the whole, un-peeled squash in to the microwave. Cook on high for 3-4 minutes. Remove and allow to cool until you can handle it. Remove the skin with a vegetable peeler and cut. It will cut and peel so much more easily!
